Guacamole is really easy to make and its a great all year round. I’ve attached two recipes. Both easy to make, but the first one is especially quick and easy as it only has four ingredients.
2 ripe avocados
2 tablespoons of minced red or white onion
1/2 cup of finely chopped fresh cilantro
2-3 tablespoons of fresh lime juice
pinch of salt
Cut the avacados in half and scoop flesh into a bowl. Follow by your minced onion and chopped cilantro.
Cut the lime in half and squeeze the juice in to your mixture. Mix gently to avoid making your guacamole completely smooth.
Add salt to taste.
Serve with tortila chips or vegtables of choice.
Makes about 1 cup.
Prepare and serve immediately.

2 ripe avocados:
1st one: cut in half, remove pit and scoop the gorgeous green flesh into a bowl and mash it until it’s smooth.
2nd one: cut in half, remove pit and make cuts into each half (first cut lengthwise, then crosswise to form small squares)
Set it aside for now.
Into the mashed one add:
-1 small clove minced or grated garlic (any more than one clove and it’s too garlicky – but you can certainly add more if you want)
-1/2 jalepeno – seeded and minced – the flavour of the pepper with avocado is a great combination and NOT spicy at all without the seeds
-1/2 tomato – seeded and diced
-1/4 cup red onion – minced finely
-1 tbsp fresh lime juice (or lemon juice)
-just a dash of cumin
-salt and pepper to taste
Now that you have the flavour the way you want it, scoop out the squares from the second avocado and gently fold them into the mashed.
This creates a nice chunky texture.
Voila! Serve with organic thin style nacho chips. YUMM
